Honey-Ginger-Garlic Glazed Tofu

Happy Wednesday everyone!

I made Honey-Ginger-Garlic Glazed Salmon about a month ago and said I would provide the Tofu version. It’s just as delicious with all of the same flavors. It’s similar to the general tso sauce but on tofu. This is a super quick and easy recipe to make and healthy. Let’s get started!

Ingredients:

  • Extra Firm Tofu
  • Soy Sauce
  • Ginger
  • Garlic
  • Honey
  • Brown Sugar
  • Crushed red pepper
  • Cayenne powder

Directions:

  1. First, finely chop the garlic and grate the ginger.
  2. In a small pot over medium heat, add a splash of oil and sauté the garlic and ginger until browned.IMG_0106.JPG
  3. Turn the heat on low and add about 4 table spoons of soy sauce, 2 spoons of honey, 2 spoons of brown sugar and stir well.
  4. Add crushed red pepper and cayenne pepper to taste.
  5. Let simmer on low for about 3 minutes and stir well. Set aside.IMG_0107.JPG
  6. Place a skillet on medium heat and let it warm up for about 2 minutes.
  7. Cube the tofu.IMG_0108.JPG
  8. Add about 3 spoons of oil and then add the cubed tofu.
  9. Let the tofu cook for about 8-10 minutes.IMG_0109.JPG
  10. Carefully with tongs, flip the tofu on to it’s other side and let it cook for another 10 minutes.
  11. With the tongs, hold the salmon onto its side and let cook.IMG_0111.JPGIMG_0110.JPG
  12. Repeat with the other side.
  13. Place the skillet flat on the skillet on low heat and pour the ginger-garlic glaze over the tofu.IMG_0112.JPG
  14. Heat on low for 2 minutes.
  15. Plate and serve!IMG_0115.JPGIMG_0116.JPGIMG_0117.JPG

Suggestions, Substitutions, Tips & Tricks:

  • Serve alongside rice and vegetables.
  • Baking the tofu is also a healthier alternative.
  • Add as much of any of the ingredients you want according to your taste.

This is a perfect recipe if you’re craving general tso chicken but want to opt out of that breaded and deep fried chicken. Tofu is a great source of protein, vitamins, minerals, and omega-3-fatty acids! It seriously takes under 30 minutes to make and is great for leftovers as well!

Rawxies

So proud to announce that I am now an ambassador of Rawxies!

Rawxies are an indulgent, nutritious, low calorie heart bar. Great for snacking! Rawxies can be enjoyed anytime of the day; breakfast, mid-morning snack, or dessert! They have a variety of flavor so it’s hard to get tired of their taste! With 130 Calories or less, Rawxies cookies were created for healthy snacking on-the-go.FullSizeRender.jpg

Rawxies are considered a pre-digested food, because they are not heated above 105 degrees. Heating food above this point kills its natural enzymes. Enzymes are what our body produces to break down certain foods. However, if the food is ‘living’, the body does not need to produce enzymes and therefore the food can digest itself. Predigested foods (those that are not heated above 105 degrees) are easily digested by the body and are a great option for anyone suffering from digestive disorders.

Its really hard to beat how amazing Rawxies are. Their crunch is

Baingan Bharta – Punjabi Eggplant

Happy Wednesday all!

Today I will be sharing my recipe on Baingan Bharta, which is roasted mashed eggplants cooked with onions, tomatoes, chillies, and ginger. This delicious roasted mashed eggplant dish is one of the most comforting things to eat along with warm rotis. The mouthwatering smoky flavor that comes from charring the eggplant is what makes this dish so amazing. You can even roast them over coal which brings them to another level! Let’s get started!

Ingredients:

  • 2 medium eggplants
  • 1 Onion
  • 2 Tomatoes
  • Ginger
  • Garlic
  • Red cayenne pepper
  • Garam Masala
  • Turmeric

Directions:

  1. Wash, pat dry and prick eggplants. Roast them over open flame until the skin starts peeling off and eggplants start to shrink. Continue on all sides until the skin browns. Let them cool in a bowl of water.IMG_0084.JPGIMG_0085.JPGIMG_0086.JPG
  2. Meanwhile, chop the tomato and pulse until smooth or chop finely and set aside.
  3. Remove eggplant skin and mash the pulp.
    IMG_0087.JPGIMG_0088.JPG
  4. In a large skillet over medium high heat, sauté the onions in a splash of oil until they become translucent.
    IMG_0090.JPG
  5. Add chopped ginger and garlic and continue to cook until browned.
  6. Add red cayenne pepper and the mashed eggplants.
  7. Cook for 10 minutes over medium high heat. Continue to stir.
  8. Add the tomatoes and cook over medium heat for another 10 minutes.IMG_0091.JPG
    IMG_0092.JPG
  9. Continue to mix and cook for an additional 5 minutes.
  10. Plate and serve alongside warm roti!

Suggestions, Substitutions, Tips & Tricks:

  • This recipe serves about 2 people.
  • It’s important to char the eggplants thoroughly so the raw flavor doesn’t remain.
  • You can add however much spices you want according to your taste!

Baingan Bharta is so easy to make! It takes no time at all to cook, yet it’s so delicious! Not many ingrediants are needed, however the spices make the dish so flavorful.
