Pretzel Dogs

Happy Wednesday! Who says you have to stop eating game day snacks since game days are over? Pretzel dogs make for a delicious, family-friendly snack. They are so easy to make and even more delicious to eat.IMG_4903.jpg

Ingredients:

  • 1 lb of Pizza Dough
  • 10 Hot Dogs, I use veggie dogs but you can use any kind you like
  • Pinch of Baking Soda
  • Salt to taste
  • 1 Egg beaten
  • Melted butter

Directions:

1) Preheat your oven to 425 degrees, line a baking sheet with some parchment paper.

2) Set aside, meanwhile in a large saucepan, add the water and baking soda and bring to a boil.IMG_4899.jpg

3) Lay the pizza crust on a lightly floured surface (you don’t want it to be sticky) and cut it into 10 strips.

4) Then roll each strip around the hot dog making sure to pinch the top and bottom end of the dough so it doesn’t unravel, place them on the prepared baking sheet while you work on the rest.

5) Place them in the boiling water (a few at a time) and cook them for about 30 seconds making sure to flip them halfway through, then place them back on the parchment paper lined baking sheet.

6) Brush them with the beaten egg, sprinkle some salt on top and pop them in the oven to bake for about 15 minutes or until golden brown.IMG_4901.jpgIMG_4900.jpg

7) When you take them out of the oven, brush the tops with the melted butter and serve!IMG_4902.jpgIMG_4906.jpg

  • Feel free to use any dogs you want: pork, beef, turkey

Profiteroles

Happy Wednesday and Happy 2018! I’m still in holiday season diet mode so I thought I’d share this recipe on Profiteroles. A profiterole, cream puff, or choux à la crème is a filled French choux pastry ball with a filling of whipped cream. It’s perfect for dessert, a pastry alongside your afternoon tea, or even just to snack on! A deliciously decadent French dessert, Profiteroles can be rightly tagged as a sinful concoction for the senses. With a lot of patience, let’s get started!

Ingredients:

  • 8 oz butter
  • salt
  • 8 eggs
  • 1.8 lbs water
  • 8 oz flour

Directions:

  1. In a sauce pan on low-medium heat boil the butter, water & salt.
  2. Using a whisk stir continuously and slowly add the flour while still stirring. This ensures no lumps are formed. This is the choux pastry dough. It is important to set it aside to COOL FULLY. Takes about 20-30 min.FullSizeRender-1.jpgIMG_4224.JPG
  3. Preheat oven to 392°F
  4. Once the mixture is cooled fully beat the mixture while adding the egg one by one to form a smooth paste like dough.
  5. Pipe the dough into small round ball or alternatively use a spoon to place the dough on a baking tray lined with parchment paper.
  6. The tops can be flattened with a spoon dipped in water if required.
  7. Place in the preheated oven for 5-7 minutes.
  8. Then decrease the temperature to 320°F and bake for 15-20 more minutes when the color turns golden brown.
  9. Once the pastry is cool, slit the choux pastry using a bread knife leaving the end joined together.
  10. Pipe / spoon the cream on the cut surface one at a time.
  11. Pour the chocolate sauce and serve.
