Baked Mac & Cheese

Hey everyone! I hope everyone had a great Thanksgiving last week and gobbled til they wobbled! Today, I will be sharing my recipe on baked mac and cheese which I indeed made for last weeks holiday. You can actually even call this a one pot wonder. It takes no time at all, easy to bake, and so delicious to eat for a large gathering or even great for leftovers. Let’s get started!

Ingredients:

  • 1 stick (8 tablespoons) butter
  • 3 blocks (8 ounces each) sharp cheddar cheese
  • 1 egg
  • 2 pounds elbow macaroni
  • 4 or 8 ounces cream cheese
  • 3/4 cup milk
  • bread crumbs

Directions:

  1. Preheat the oven to 375 degrees F. Butter a 9×13 baking dish.
  2. Bring a large pot of water to a boil. Cook the pasta until al dente and drain then set aside.
  3. While the pasta is cooking, cut the cheddar into small cubes.FullSizeRender-17.jpg
  4. Melt the butter in a large skillet, over low heat. Add the cubed cheddar and melt until creamy, stirring constantly. This will take about 10 minutes.FullSizeRender-20.jpgFullSizeRender-21.jpg
  5. Add the egg and stir until egg is mixed into the cheese.
  6. Add pasta to skillet and stir until combined. Stir in the milk and cream cheese, until cream cheese has melted into the pasta.FullSizeRender-18.jpg
  7. Add half of the pasta mixture to a 9-by-13-inch baking dish and top with some bread crumbs.FullSizeRender-24.jpg
  8. Add the remaining half of the pasta, followed by more bread crumbs.FullSizeRender-23.jpg
  9. Bake for 35 minutes and then broil on low for 5 minutes.

Suggestions, Substitutions, Tips & Tricks:

  • This serves about 8 people.
  • Melting the cheddar requires a lot of arm strength and patience. Don’t worry- this recipe is totally worth it!
  • You can add whichever cream cheese flavor- I added jalapeño.
  • You can even top with onions, bacon, mushrooms, etc!

Summer Garden Pasta

Happy Wednesday everyone! Now that Summer is almost at its end, I wanted to make a Summer Garden Pasta filled with fresh veggies while they are still in season and before the Fall vegetables come to town! It’s quick, delicious, and great warm or cold. Let’s get started!

Ingredients:

  • Pasta of your choice
  • Broccoli
  • Zucchini
  • Mushroom
  • Carrots
  • Alfredo sauce
  • Garlic powder
  • Italian seasoning

Directions:

  1. Bring a pot of water to a boil and add the pasta. Let it cook until al dente.
  2. While the pot of water is coming to a boil, cut the vegetables of your choice.FullSizeRender-9
  3. Once the pasta is cooked, drain the water.
  4. Add about 1 cup of alfredo sauce and mix to cover all the pasta.FullSizeRender-5.jpg
  5. Add the vegetables and seasoning to taste.FullSizeRender-7.jpg
  6. Let it warm on medium heat for about 5 minutes.

Suggestions, Substitutions, Tips & Tricks:

  • You can add whatever veggies you have on hand or you like. I would add more except this is all I had at the moment.
  • You can even use tomato sauce instead of alfredo- whatever your heart desires!

Caramel Layered Brownies

Hi everyone! I hope you all are having a fantastic week. This past weekend, I hosted a party and since every party needs dessert, it was so hard for me to decide which one to bake. Everyone loves the classic fudgy, chocolatey, gooey brownies. So why not add some caramel in between? This recipe on Caramel Layered Brownies are too good. It was so hard to just place one brownie on a plate because I surely wanted to eat more than one! They take no time at all to make and no time at all to eat! Let’s get started!

Ingredients:

  • 1 box of brownie mix
  • 2 eggs
  • Oil
  • Water
  • 1 can of sweet condensed milk
  • 1 bag of caramel baking chips

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Follow the directions on the brownie mix box. In a large bowl, combine brownie mix, 1/3 cup water, and 2/3 cups oil. Mix until smooth and then whisk in 2 eggs.
  3. In a small enough baking tray, add about 1/4 of the brownie batter.
  4. Place in oven at 375 degrees F for 12 minutes. Once the brownies have baked for 12 minutes, leave the oven on, but set aside the brownies to cool.
  5. While the brownies are baking, in a small pot over medium heat, add 1 can of sweet condensed milk and the bag of caramel baking chips.IMG_9933.JPG
  6. Continuously stir until all of the caramel baking chips are melted and the mixture turns into caramel. This will take about 10 minutes.IMG_9934.JPG
  7. Once the caramel mixture is done, pour the entire mixture over the brownies and spread evenly.IMG_9935.JPG
  8. Let cool for 5 minutes.
  9. Then, add the remaining brownie mixture over the caramel layer.IMG_9936.JPG
  10. Place the brownies back in the oven at 375 degrees F for about 35 minutes. Do not over bake.
  11. Once the brownies are done baking, set aside to cool and then cut into squares.

Suggestions, Substitutions, Tips & Tricks:

  • I used a brownie mix box to save time as I was making other dishes for a party. You can make these brownies from scratch with flour, sugar, baking soda, vanilla extract, eggs, water, oil, and coco powder. I will make brownies from scratch in the future and share the recipe!
  • Feel free to add chocolate chips to the brownie batter to make it even more chocolatey!

This recipe really makes your stomach happy. Very comforting. It doesn’t even have to be for a party. These Caramel Layered Brownies are a perfect weekend treat and would be paired deliciously with a glass of milk!
