Jade Leaf Matcha Muffins with Spruts Nuts

Happy Wednesday all! I’m already hating this cold weather and it just started…a day ago. With cold weather comes comfort and warm foods. Especially with the holidays on their way, it’s important to still indulge but in a smart way. These Matcha Muffins are made with Jade Leaf Matcha and topped with Spruts Nuts. With a dash of cinnamon, it surely incorporates that warm holiday feeling, perfect for these cold days to come. Ingredients:

  • 2 cups all purpose flour
  • 1 egg
  • 1/4 cup sugar
  • Vanilla extract
  • Cinnamon powder
  • Salt
  • Baking powder
  • 1/3 cup melted butter
  • 1 cup milk
  • Spruts Nuts
  • Jade Leaf Matcha Powder

Directions:

  1. Preheat oven to 350 degrees F and grease 12 muffin cups.
  2. Whisk the flour, salt, baking powder, Jade Leaf matcha, a dash of cinnamon, and sugar together in a mixing bowl; set aside.
  3. Whisk together the egg, melted butter, vanilla extract, and milk in another bowl.
  4. Stir the milk mixture into the flour mixture until just moistened.
  5. Divide the batter among the prepared muffin cups.

  7. Bake in the preheated oven for about 25 minutes.
  8. Cool on a wire rack.

Bhurji – Scrambled Eggs with a Spicy Twist

Happy Wednesday everyone!

Today, I will be sharing a recipe on Bhurji, scrambled eggs with loads and loads of flavor from Indian spices. It’s fun and easy to make, great for leftovers, and great for a large gathering. Let’s get started!

Ingredients:

  • 6 eggs
  • 1 Onion
  • 3 Tomatos
  • Turmeric
  • Garlic
  • Gharam Masala
  • Red chili powder
  • Salt

Directions:

  1. In a large bowl, whisk the eggs and keep aside.IMG_2467.JPG

  3. Take a very large skillet, add a spoon of vegetable oil and heat on medium.
  4. Add the chopped onions and garlic and sauté until translucent.
  5. Add the chopped tomatoes and sauté for 2 minutes.FullSizeRender-6.jpg
  6. Add salt, red chili powder, and turmeric powder to taste. Mix well.

Indian Chai

Hi everyone! Today, I will sharing my recipe on how to make Chai, Indian tea. It’s so easy to make, but it has so much flavor from the spices and the aroma is to die for. I usually drink this after dinner or in the mornings on the weekends. Let’s get started!

Ingredients:

  • Milk
  • Ground or roughly ground Indian Chai/Tea
  • Cardamom
  • Ginger
  • Sugar or Honey

Directions:

  1. Fill a pot with water. If you are making 2 cups of chai, fill the pot with 1 cup of water.FullSizeRender-8.jpg
  2. Grate some ginger and place in the pot.
  3. Add cardamom seeds in the pot.
  4. Add 2 spoons of Indian tea and place in the pot.FullSizeRender-10.jpg
  5. Bring the pot of water to a boil and let simmer for 3-4 minutes.

  7. Add 2 spoons of sugar or 1 big spoon of honey.

  • This recipe serves about 2 people.
  • You can add as much sugar, honey, or ginger you want. You can even omit the ginger.
  • You can use skim milk or low fat milk.
