Apple Cinnamon Oatmeal Breakfast Muffins

Check out these healthy Apple Cinnamon breakfast muffins! Made with oat flour and topped with cranberries, almonds, and flax seeds. Perfect for an on the go snack. Plus, they’re vegan!

Ingredients

  • 4 cups old fashioned oats (blend to make flour)
  • 4 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 2 cups milk
  • ¼ cup brown sugar
  • 2 teaspoons vanilla extract
  • ⅓ cup pure maple syrup
  • 1 cup small diced apple
  • Mixed almonds, cranberries, flax seeds

Directions

  1. Pre-heat oven to 375 degrees F.
  2. Add all ingredients to a large bowl and mix well until everything is combined.
  3. Spray a muffin tin with cooking spray and scoop oatmeal mixture. The mixture will be a little watery, so it’s important to mix well before each scoop to make sure you get an even combination of milk and oats.
  4. Top with almonds, cranberries, flax seeds.
  5. Bake oatmeal cups for 20 minutes, or until cooked through.

Quick and Easy Enchiladas

Happy Wednesday everyone!

Today, I will be sharing quick and easy recipe on how to make enchiladas. There are so many different ways you can make enchiladas, I will include the variations at the end. Making the sauce from scratch taste even better, however I will be sharing that recipe soon. Apologies for not making these look picture perfect- but I can assure you the flavor and deliciousness makes up for it! Let’s get started!

Ingredients:

  • Refried beans
  • Tortillas
  • Shredded mexican cheese
  • Onion
  • Spinach
  • Green pepper
  • Taco seasoning
  • Garlic powder
  • Enchilada sauce

Directions:

  1. Chop the onion, green pepper, and cut the spinach.
  2. In a large skillet, sautée the vegetables until softened.FullSizeRender-11.jpg
  3. In a large pot, add refried beans and the vegetables.

  5. Cook over medium heat for about 10 minutes.
  6. In another small pot, add the enchilada sauce and garlic powder and taco seasoning to taste.FullSizeRender-10.jpg
  7. In a large baking tray, spray cooking spray evenly.
  8. Get a tortilla and add a spoon of beans and spread evenly on half of the tortilla.
  9. Add Mexican cheese and roll into an enchilada.
  10. Place on the baking tray.
  11. Repeat until all tortillas are done and placed side by side on the tray.
  12. Pour all of the enchilada sauce over the enchiladas.

  14. Baking in oven at 380 degrees F for 30 minutes and then broil on high for 5 minutes.

Suggestions, Substitutions, Tips & Tricks:

  • You can add whatever you’d like in the bean filling! From chicken, to soy chicken, to just plain beans.
  • Adding hummus to the tortilla gives it flavor- trust me! I was skeptical at first but it taste amazing.
  • Making the sauce from scratch does wonders, however this is a quick and easy version of how to make enchiladas. I will share the longer way coming soon.

Jade Leaf Matcha Muffins with Spruts Nuts

Happy Wednesday all! I’m already hating this cold weather and it just started…a day ago. With cold weather comes comfort and warm foods. Especially with the holidays on their way, it’s important to still indulge but in a smart way. These Matcha Muffins are made with Jade Leaf Matcha and topped with Spruts Nuts. With a dash of cinnamon, it surely incorporates that warm holiday feeling, perfect for these cold days to come. Ingredients:

  • 2 cups all purpose flour
  • 1 egg
  • 1/4 cup sugar
  • Vanilla extract
  • Cinnamon powder
  • Salt
  • Baking powder
  • 1/3 cup melted butter
  • 1 cup milk
  • Spruts Nuts
  • Jade Leaf Matcha Powder

Directions:

  1. Preheat oven to 350 degrees F and grease 12 muffin cups.
  2. Whisk the flour, salt, baking powder, Jade Leaf matcha, a dash of cinnamon, and sugar together in a mixing bowl; set aside.
  3. Whisk together the egg, melted butter, vanilla extract, and milk in another bowl.
  4. Stir the milk mixture into the flour mixture until just moistened.
  5. Divide the batter among the prepared muffin cups.

Meta Matcha Brownies

Happy Wednesday everyone! Today, I will be sharing a recipe for brownies. These aren’t just your average chocolate brownies- these are Meta Matcha Brownies! There are so many ways you can incorporate matcha into your diet, and baking with it is an easy one. These brownies still do taste sweet, but the delicious taste of matcha definitely kicks in after! Let’s get started.

Ingredients:

  • 1/2 cup all purpose flour
  • 1/2 cup Matcha (green tea) powder
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon baking powder
  • 8 tablespoons unsalted butter, room temperature
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat oven to 350F and spray an 8-inch square pan with cooking spray.
  2. In a mixing bowl, whisk together the flour, matcha (green tea powder), salt, and baking powder; set aside.
  3. In a bowl, mix together the butter, sugar; add eggs and vanilla.

Very Veggie Soup

Hi everyone! Now that Fall is around the corner, my go-to recipes are always hearty soups. Today, I will be sharing a classic veggie soup. It’s a great way to sneak all those veggies in but all you can taste is the flavorful garlic and tomatoes. It takes no time at all and is super easy. Let’s get started!

Ingredients:

  • Tomatoes
  • Garlic
  • Beet
  • Ginger
  • Carrots
  • Onions
  • Salt and Pepper to taste

Directions:

  1. Fill a large bowl halfway with water.
  2. Place the tomatoes, beet, and carrots in the bowl.FullSizeRender-4.jpg
  3. Microwave for 6 minutes to soften the veggies.
  4. Meanwhile, chop the onion, garlic, and ginger.FullSizeRender-2.jpg
  5. Let the boiled veggies cool to room temperature.FullSizeRender-8.jpg
  6. In a food processor or Ninja blender, add the chopped veggies and about 1 cup of water.

  8. In a big pot, pour the puree in and turn on the heat to medium.
  9. Add salt and pepper to taste.
  10. Let the soup come to a boil and let it simmer for 10 minutes.

  • You can add whatever veggies you have on hand or you like. I would add more except this is all I had at the moment.
  • You can use broth instead of water.
